Valentine's banana cream pancakes
Tid Bits: If you love banana pancakes, try this recipe! It helps to make the Banana Cream Topping in advance, as it will really cut down on prep time when you make the pancakes. I hope you enjoy them!
½ cup whole wheat flour
½ cup unbleached all purpose flour
4 tablespoons Baby Gourmet Oatmeal Cereal (or flavor of choice)
1 teaspoon baking powder
¾ teaspoon baking soda
¼ teaspoon salt
1 ½ cup milk
1 tablespoon melted butter or oil
½ teaspoon vanilla
Banana Cream Topping
2 ripe bananas, mashed
½ cup plain Greek yogurt
Pinch of cinnamon
Maple syrup (optional)
- In a medium bowl, combine flours, baby cereal, baking powder, baking soda and salt.
- In a small bowl whisk together egg, milk, melted butter and vanilla. Add to dry ingredients and stir until moistened.
- Heat non-stick pan or prep griddle with cooking spray over medium heat. Use ¼ cup of batter for each pancake. Cook until lightly browned on each side. Keep warm in the oven until all the batter has been used up.
Option: use a heart-shaped cookie cutter to shape pancakes either during the cooking process or afterwards.
- For topping stir bananas, Greek yogurt and cinnamon until smooth. Serve either on the side or on top of the pancakes.
Serving option: Serve heart-shaped pancakes topped with banana cream or cut into bite sized pieces and top with banana cream, allowing baby to feed themselves
