shake it up sweet potato mash


1-2 lb. sweet potato, peeled and cut into ½ inch cubes (medium sized)

½ lb. parsnips, peeled and sliced

1 tbsp. olive oil

½ tsp. ground sage

1 bottle Baby Gourmet Vanilla Shakers

  1. Preheat oven to 400.
  2. Toss the sweet potatoes and parsnips with olive oil and sage. Arrange in a single layer on a lined baking sheet.
  3. Roast the vegetables until tender when pierced with a knife, about 25-30 minutes.
  4. Use a potato masher to mash all ingredients together until smooth. Serve.
