favourite crispy waffles

My favourite Mother’s Day tradition is breakfast in bed with freshly made waffles. Today my kids make these on their own, but before this was possible, we used to make these together. Waffles are a perfect comfort food to make with your children. Easy to make and so delicious. I hope you treat yourself this Mother’s Day!


1 ½  cups all-purpose flour

½ teaspoon salt

4 teaspoons baking powder

2 teaspoons sugar

2 eggs, separated

1  ¾ cup warm milk

½ cup butter, melted (or coconut oil)

1 teaspoon vanilla extract

  1. In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to the desired temperature.
  2. In a separate bowl, beat the eggs yolk. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.
  3. In a small bowl, beat the egg whites until stiff and form a peak. Add egg whites to waffle mixture and fold in with a spatula, just until combined. Do not overmix.
  4. Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately with your favourite toppings.

Topping suggestions: fresh whipped cream, berries, warm maple syrup, raspberries or sliced bananas!
