A healthy spin-off on a delicious bumbleberry crumble! Strawberries, blueberries and rhubarb add sweet tartness, and quinoa is used as the “buttery” topping.
Bumbleberry crumble was a tradition in my house; our mom would make it with fresh berries from the garden.
Our healthier version uses seasoned kale for added nutrition. Try blending it with vanilla Greek yogurt for a “crumble a la mode” dessert treat.
