Sweet Potato Curry

Warm your family's tastebuds with this sure-to-please sweet potato curry inspired by Thai cuisine!

Serves 6 to 8
  1. Heat oil over medium-high heat. Sauté the onion and garlic until lightly browned, about 5 minutes.
  2. Add ginger and Thai curry paste. Cook for another few minutes, until the spices are heated through and fragrant.
  3. Add the sweet potatoes, chickpeas, coconut milk, orange juice, peanut butter and salt. Bring to a simmer, lower the heat and continue simmering for about 30 minutes, until sweet potatoes are tender.
  4. Stir in the peas, spinach and cilantro.
  5. Serve over rice.
  6. Use a mild yellow curry for a meal kids will love just as much as the adults.
