Sweet Potato Curry

- Heat oil over medium-high heat. Sauté the onion and garlic until lightly browned, about 5 minutes.
- Add ginger and curry paste, cook until the spices are heated through and fragrant, another few minutes.
- Add the sweet potatoes, chickpeas, coconut milk, orange juice, peanut butter and salt. Bring to a gentle boil, lower the heat and continue simmering until the sweet potatoes are tender, about 30 minutes.
- Stir in the peas, spinach, cilantro and lime juice.
- Serve over rice.
