Jen's spring twist on traditional hummus.
Banana Fig Oatmeal
This recipe brings back the fondest memories of the early days cooking at the farmers market. Banana Fig Oatmeal was always our first recipe on the menu so we could each eat a big bowl before starting our long day.
3 cups milk
4 large dried figs, diced
¾ tsp. cinnamon
¼ tsp. nutmeg
2 cups old-fashioned rolled oats
1 cup mashed ripe bananas (about 3 medium)
- In a medium saucepan, bring milk, figs and spices to a gentle boil; stir in oats. Return to boil, reduce heat to medium. Cook for 5 minutes, stirring occasionally until liquid is absorbed.
- Remove from heat. Stir in mashed bananas.
- Top with dollop of yogurt, banana slices and 1 tbsp. maple syrup if desired.
